Glutenfree Millet- Oat Bread

Ingredients:

  • 3 tbsp ground flaxseeds+ 1/2 cup water

  • 1/2 cup unsweetened applesauce

  • 3 tbsp maple syrup 

  • 1 3/4 cups water

  • 3 cups gluten-free oat flour

  • 3/4 cup millet flour

  • 1 1/2 cups tapioca starch

  • 1 1/2 tbsp baking powder

    Kitchen utensils: Blender

Directions:

 Preheat the oven to 350F/180C and line a loaf pan with parchment paper.

In a small bowl, mix together the ground flaxseeds and water. Let it sit for 5 minutes until thickened. Then, transfer it to a medium-sized mixing bowl along with the applesauce, maple syrup, and water. Whisk until well combined.

Add the oat flour, millet flour, tapioca starch, and baking powder to the wet ingredients. Stir until everything is evenly mixed. Allow the batter to rest for 15 minutes to expand.

Carefully pour the batter into the prepared loaf pan, making sure not to deflate any air bubbles that have formed. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove the loaf from the oven and immediately transfer it out of the pan. Peel off the parchment paper and place the loaf on a wire rack to cool completely. Once cooled, slice and serve!
